Banana Prickly Pear 125g
This product combines the acidity, texture and bright colour of prickly pear with the sweetness and smoothness of banana. With a slightly acidic taste, it can be eaten with a teaspoon, spread, as an ingredient for vinaigrettes, with duck breast, game, to garnish foie gras or cheese, to stuff or cover desserts, to combine with yoghurt.

My very first product, designed on the island of Gran Canaria. The banana being at the origin of my project thanks to its sugar content, is the basis to enhance the purplish prickly pear, opuntia ficusus-Indica, this small fruit of the cactus despised in the kitchen. Only in some parts of the Canary Islands can they be found processed, mainly into juice or jam. I therefore wanted to pay tribute to this fruit on which the scale insects Dactylopius coccus, small insects that produce a highly appreciated natural colouring agent, feed.
I brought the prickly pears from the property of an organic producer in Piso Firme, on the island of Gran Canaria, where the fig trees grow in a wild state in volcanic soil and without watering, concentrating all the energy of the sun and the minerals of the soil
Thanks to dopamine, a powerful water-soluble antioxidant, bananas have demonstrated antioxidant activity similar to that of vitamin C. It is also an anti-depressant fruit through the presence of tryptophan, a substance that the body transforms into serotonin, the brain's chemical messenger known for its relaxing effect and which causes general well-being.
Bananas also have long-established antacid and anti-ulcer effects. It also helps to relieve the symptoms of diarrhea. For athletes, bananas are particularly recommended because of their high carbohydrate content, B-group vitamins, potassium, which also helps against hypertension, and magnesium (important for good muscle work). It provides all the energy necessary for physical and intellectual activity, then acting as a regenerator, thanks to its sugars assimilated in less than two hours by the muscles, thus accelerating recovery after exercise.
